Happy Hour in Las Vegas.

The conference work is done and it's time to ease into the 8-hour marathon that seems to follow when you're on the Strip.

Sleep? Not a lot. Too much stimulation.

Loved this half-order of excellent Buffalo Wings. Yes, the celery was pretty tired, like The Wingophile later in the week.

But the wings were wonderful.

Solid NY Butter sauce, lovingly applied.

(I think double-tossed.)

The wings were excellent quality, ideally-sized with not a hint of gristle.

And they were perfectly-cooked.

I can tell you from experience, this is very rarely seen.

The chicken meat didn't shimmy and shine.

Nor did it crumble.

It yielded perfectly and smartly to each bite.

The second-best part?

They're six bucks at Happy Hour.

Post-script: at another conference two weeks later, the same selection was not quite as fresh, nor as well-cooked, but still 2.5
